Our oil comes from the hills of Vinci, near Florence in Tuscany, where for generations farms have been producing some of the finest oils in Tuscany.

After selection in the oilve fields, the processing and pressing of the olives can begin in the pressing mill, which is also where the product is packaged and distributed.

In the mill processing begins with the washing of the olives, followed by the crushing or milling process, kneading, and finally the extraction.

The main processes involved are

1.
Defoliation and washing with water

allows us to eliminate impurities carried on leaves, branches, earth and parasites, therefore improving the quality of the product.

2.
Pressing

This process aims to break down the cell walls and allow the juices to be exctracted. The product at this phase is made up of oil, water and solid parts.

3.
Kneading

This involves the re-mixing of the oily fruit pulp with the aim of breaking down the emulsion between the oil and water and to facilitate its separation in the next step.

4.
Extraction. Separation of the oil from water.
5.
Bottling and packaging

in stainless steel containers, at controlled temperatures, without oxygen and through the use of nitrogen. Bottling with measuring cap anti-filling and automatic level control.
